The grapes were hand-harvested, destemmed, and pressed before the juice settled overnight. The clear juice was racked the following day and transferred to fermentation tanks, where cold fermentation took place over approximately 26 days. After fermentation, the individual Elgin components were blended following the first racking to create the final wine.
