Citrus-Roasted Salmon with Lemon, Dill & Caper Crème Fraîche and Fennel Herb Salad

Ingredients

Citrus-Roasted Salmon

2 lb salmon fillet, skin on
2 Tbsp olive oil
1 Tbsp honey
1 tsp fennel seeds, lightly crushed
1 tsp fresh thyme leaves, plus extra for serving
Zest of 1 orange
1 orange, halved and thinly sliced into semicircles
Salt and freshly ground black pepper, to taste

Lemon, Dill & Caper Crème Fraîche

1 C crème fraîche
1 Tbsp lemon juice
Zest of ½ lemon
1 Tbsp capers, finely chopped
1 Tbsp fresh dill, finely chopped
Salt and freshly ground black pepper, to taste

Fennel Herb Salad

1 fennel bulb, very thinly sliced
2 oz arugula
Small handful fresh dill
Small handful fresh parsley
2 Tbsp olive oil
1 Tbsp lemon juice
1 tsp honey
Salt and freshly ground black pepper, to taste

Method

Roast the Salmon

Preheat the oven to 400°F. Place the salmon skin-side down on a parchment-lined baking tray.

Mix the olive oil, honey, fennel seeds, thyme and orange zest, then brush evenly over the salmon. Season with salt and black pepper and arrange the orange slices over the top.

Roast for 20–25 minutes, depending on the thickness of the fillet, until just cooked through and the orange slices are lightly caramelized.

Make the Lemon, Dill & Caper Crème Fraîche

Stir together the crème fraîche, lemon juice, lemon zest, capers and dill. Season lightly with salt and black pepper and chill until ready to serve.

Make the Fennel Herb Salad

Combine the fennel, arugula, dill and parsley in a bowl. Whisk together the olive oil, lemon juice and honey, then toss through the salad just before serving. Season to taste.

To Serve

Transfer the salmon to a serving platter and scatter with extra thyme. Serve with the lemon, dill and caper crème fraîche and fennel herb salad on the side.

In 2007, Dekkersvlei pioneered what it describes as the world’s first White Pinotage, taking South Africa’s uniquely indigenous red grape and giving it an entirely unexpected expression. The 2025 vintage is fresh, creamy and quietly distinctive, with bright orchard and stone fruit balanced by gentle richness and refreshing acidity.

Fresh aromas of white pear, peach and citrus make a lovely match for the orange and lemon in the recipe, while the wine’s smooth, creamy palate works beautifully with salmon and crème fraîche. For the best experience, serve Dekkersvlei White Pinotage well chilled, but not ice cold, around 48–52°F. This allows the wine’s freshness to show while still giving its creamy texture room to come through.
