In the cooler pockets, Chardonnay, Sauvignon Blanc and Pinot Noir develop vivid fruit, natural acidity and fine aromatic detail. Warmer, drier sites can produce compelling Syrah and Mediterranean varieties with spice, structure and savory depth.
