The fruit was harvested early in the morning at approximately 22.5° Balling from unirrigated vineyards planted on deep red Oakleaf soils outside Darling. Whole bunches were gently pressed before the juice settled for 48 hours.
Fermentation took place at cool temperatures in stainless steel tanks. Fermentation was intentionally stopped before completion to retain the wine's natural fruit sweetness, creating its signature off-dry style while preserving freshness and varietal purity.
