Description
Pale green with a light yellow hue, the nose offers fragrant aromas of lemon, apricot, and delicate white flowers. The palate opens with a gentle natural sweetness before layers of lime, stone fruit, and citrus unfold across a refreshing backbone of lively acidity. The balance between crisp citrus freshness and residual sugar gives the wine remarkable purity and drinkability, while the cool Darling terroir provides the structure for further bottle development.
This Riesling is a natural match for Thai cuisine, Cape Malay curries, spicy Asian dishes, sushi, and creamy goat's cheese.
Fermentation took place at cool temperatures in stainless steel tanks. Fermentation was intentionally stopped before completion to retain the wine's natural fruit sweetness, creating its signature off-dry style while preserving freshness and varietal purity.

For this Riesling, fruit from the cool Darling region benefits from its proximity to the Atlantic Ocean. Maritime influences help preserve natural acidity and encourage the slow, even ripening required for expressive, well-balanced Riesling.
