Description

Shows a deep black and red core. On the nose there is abundant aromas of black currants, chocolate, espresso roast and charcoal. The Cabernet in the blend brings out incense, balsamic and black pepper corns. A gentle oak impression and a incredible richness leads to a well-integrated palate. Wine will last for another 20 years. Drink the mystery #Shiner.
New barrels are seasoned, dry, and are without toasting for up to five years, before being steamed. They are then used for 16 months to make the wine. There is an inherent patience in the making of these wine.

Paserene is a small, family operated winery owned by Martin Smith and Ndabe Mareda, the sole purpose of which is to produce high-end, luxury wines. Great care was given to ensure that the wines produced, and artwork on the labels, are truly authentic to its “sense of place and people” and will guarantee a lasting legacy.

The name Paserene comes from the Latin word Passeriformes, the order of traveling and free birds containing swifts and swallows. Paserene is situated in the quaint town of Franschhoek and is home to their award-winning wine range. A professional and contemporary tasting lounge is situated on the property.
