Description
The nose reveals layers of red and blackberry fruit, supported by subtle notes of oak spice and dark fruit concentration. On the palate, the wine is full-bodied and deeply textured, with a rich, concentrated mid-palate that carries through seamlessly into a long, lingering finish. Despite its depth and intensity, the wine remains controlled and balanced, with fine structure supporting the fruit throughout.
This is a serious red blend that pairs beautifully with roast lamb, beef fillet, braised short ribs, and mature cheeses.
The Cabernet Sauvignon spent three weeks on the skins, while the Merlot remained for four weeks, allowing each component to develop its own texture and tannin profile. Only free-run juice was used for the final blend to preserve finesse and purity.
The wine was matured for 18 months in French oak barrels, with 50% new oak, adding depth, structure, and integration without overwhelming the fruit.
