Description
This rosé shows a delicate rose hue with lively, persistent bubbles. The nose reveals inviting aromas of fresh strawberries, sour cherries, and hints of rhubarb, followed by subtle notes reminiscent of strawberry shortbread. On the palate, juicy red berry flavors unfold with a gentle sweetness that is beautifully balanced by crisp acidity, creating a sparkling wine that feels vibrant, refreshing, and elegantly rounded.
Equally suited to celebration or casual enjoyment, this Cap Classique pairs wonderfully with cheese platters, soft cheeses such as Brie or Camembert, lightly spiced dishes, and desserts that are not overly sweet.
This MCC is bottle fermented and aged on the lees for 12 months prior to disgorgement. During disgorgement a larger volume of dosage is added to ensure a perfectly balanced Demi-Sec Cap Classique.

Simonsig Wine Estate comprises 302 hectares with 210 hectares (518 acres) under vines. The ancient soil types consist of sandstone, decomposed granite and shale. All the vineyards receive supplementary irrigation.
The estate was voted top wine producer by no less than three South African wine competitions and bears numerous accolades, including South Africa's Top Shiraz and Woman Winemaker of the Year.
